RECIPE: Hot Blue Cheese Dip

I've written before about my love of a local restaurant, Milner's. It was the site of our wedding reception and we recently dined there for our first anniversary. My favorite menu item is an appetizer: a trio of cheese dips served with lavash crackers. Ever since our first visit to Milner's nearly two years ago I've been attempting to re-create their blue cheese dip and yesterday I was successful!

This dip is great with crackers, but also with veggies or even with chicken wings. I saw many recipes online that included bacon, though mine does not.


HOT BLUE CHEESE DIP
12 oz cream cheese, softened
4 oz crumbled blue cheese
1/3 c heavy cream
2 heaping t minced garlic
2 green onions, chopped
fresh ground black pepper

Preheat oven to 350 degrees. Cook garlic in a little bit of oil until brown. Be careful not to burn it! Beat cream cheese, garlic and blue cheese in a large bowl with an electric mixer until smooth. Add cream and continue to beat on low speed until incorporated. Sprinkle with pepper (to taste) and stir in green onions. With a spatula, move to a glass baking dish.

Cook for 25-30 minutes until cheese on top begins to brown. Serve immediately.
