12 Days of Christmas Cookies: Butterscotch Chip
Butterscotch is my #1 favorite kind of pudding, so I knew I had to make these cookies as soon as I saw that butterscotch pudding mix was one of the ingredients. They have lots of other fun ingredients, too! ;)
BUTTERSCOTCH CHIP COOKIES (2 dozen)
1 c butter, softened
3/4 c brown sugar
1/4 c sugar
1 t vanilla
1/2 c quick oats
2 c flour
1 t baking soda
1 t cinnamon
1/4 t salt
1 (3.4 oz) instant butterscotch pudding
1 c semi-sweet chocolate chips
1 c butterscotch chips
1 c coarsely crushed pretzels
In a large mixing bowl, cream the butter and both kinds of sugar until fluffy. Add eggs and vanilla and mix again.
Combine the oats, flour, baking soda, cinnamon, salt and pudding mix in a separate bowl. Slowly add flour mixture to the mixing bowl and beat until combined. With a spoon, mix in chocolate chips, butterscotch chips and pretzels.
Drop by small spoonfuls onto a baking sheet. Bake at 375 degrees for 8-10 minutes. Cool on a wire rack.
