RECIPE: Neapolitan Cupcakes

Last night, Brandon and I celebrated Valentine's Day a little bit early. I decided that I wanted to cook this year and then in the future we'll alternate years dining out and dining in. To accompany our meal, I found a recipe for the most delicious, simple cupcakes with a surprise brownie layer! They are to die for.


NEAPOLITAN CUPCAKES (yields 24)
1/2 pkg brownie mix (i used Duncan Hines dark chocolate)
1 egg
1/4 c canola oil
1/4 c water

1/2 pkg strawberry cake mix
1 T canola oil
1 1/3 c water
1.5 egg

1 container cream cheese icing

Preheat oven to 350 degrees. Line muffin pans with paper liners. Whisk together brownie mix, egg, canola oil, and water. Spoon into prepared muffin cups. With an electric mixer, beat cake mix, canola oil, water, and egg on medium speed for 1-2 minutes. Spoon over brownie batter. Bake cupcakes for 20 minutes or until the top springs back when lightly touched. Allow to cool before frosting.
