time flies

with less than a week left in boone, i’ve been reflecting on my time here and attempting to check off some of the items on my boone bucket list. so far, i’ve done the following:
  • wing night at macados
  • the blowing rock
  • crave

that’s it, folks! i need to step up my game if i’m going to do anything else between now and tuesday. i have photos of these 3 events, but i mistakenly already packed my camera cord, so they’ll have to be posted later. what i do have, however, are old photos… photos of things i’ll REALLY miss about my life in boone…

i feel compelled to blog about my latest internet addiction: pinterest. one of my jobs requires me to sit at a desk and play on the internet for 5 or 6 hours at a time (seriously), so my newfound pinterest love comes as no surprise, since i have THAT much time to kill in front of a computer.
what is pinterest? this website is basically an online bulletin board on which you can “pin” your favorite photos from the web. they link right back to the website where you found them, in case they’re accompanied by an interesting article, etc.
what do people pin? recipes, fashion, pets & animals, travel destinations, wedding planning, baby planning, home decorating, etc.
why is it so great? for someone who is as neat and organized as me, pinterest is a dream! i can log on, see all of my pins in their appropriate category, and easily find what i’m looking for.

chef #10: breakfast muffins

a rarity occurred today: i was in boone on a sunday morning with absolutely nothing to do. WOAH! i decided to make myself a nice sunday brunch. i combined/edited two recipes for breakfast muffins and came up with my own version. i’d recommend making these if you have overnight visitors and want to serve them something more than cereal for breakfast! i have no idea what i’m going to do with the 16 that i have left…

2 c flour
1 t baking powder
1 t baking soda
1 t salt
1/4 t pepper
1/8 t red pepper
4 eggs
1 c buttermilk
2 T oil
3 T butter, melted
1 bunch scallions, diced
1 red bell pepper, diced
1 c cooked ham, diced
1/2 lb cooked bacon, crumbled
1 c shredded sharp cheddar cheese
heat oven to 400 degrees. spray muffin pan(s) with cooking spray. in large bowl, whisk together the flour, baking powder, baking soda, pepper, red pepper, and salt. in medium bowl, whisk together the eggs, buttermilk, oil, and butter. stir in the scallions, pepper, ham, bacon, and cheese. add the wet ingredients to the dry and mix until just moistened. scoop batter into pan and bake for 25-30 minutes or until brown.

hands-down the best piece of furniture for my new apartment is the pie safe my dad MADE FOR ME for my graduation gift. the picture is terrible quality, but trust me- it's beautiful!
