chef #28: cheddar ale spread

ok, i know that my last post was also about cheese, but hey- i LOVE cheese! don't judge me. plus, i made this recipe almost a month ago and just hadn't gotten around to posting it yet. i made this thinking that it would be a dip for chips and such. apparently i ignored the name because it is definitely a spread... very thick, with a cream cheese base. i am not very fancy sometimes, so i've been calling it my "beer cheese spread."

8 oz cream cheese, softened
2 t dijon mustard
2.5 c sharp cheddar cheese
2 T heavy cream
1/4 t salt
1/4 c light beer
2 T fresh parsley, chopped

combine everything except the parsley in a large bowl and mix with electric hand mixer until fairly smooth. stir in parsley. refrigerate for up to 4 days. important: remove from fridge at least an hour before serving! serve with pretzels, celery, carrots, etc.
