RECIPE: Pumpkin Chocolate Chip Cookies

This season calls for lots of recipes with pumpkin. Over the weekend, I tried out a recipe I found online for pumpkin chocolate chip cookies. The recipe claims to be more “cookie”like as opposed to “cake”like… I found it to be quite the opposite. At any rate, these are delicious!


PUMPKIN CHOCOLATE CHIP COOKIES (yields 2 dozen)
1 c pumpkin
1 c sugar
1/2 c butter (room temp)
1 egg
2 c flour
2 t baking powder
2 t cinnamon
1 t baking soda
1 t milk
1/2 t salt
1 T vanilla extract
1.5 c dark chocolate chips
Combine pumpkin, sugar, butter, egg, and milk in a bowl and mix with hand mixer until well combined. In a separate bowl, combine the dry ingredients. Add dry ingredients to wet ingredients and mix by hand until just combined. Add vanilla and chocolate chips and gently mix until incorporated. Drop by spoonfulls onto greased baking sheets and bake at 350 degrees for 10-12 minutes or until light brown.
