chef #17: tomato tortellini soup

two things i love are a) trying new recipes and b) cooking for friends. what an exciting day when i get to do both of these things! i found the following recipe on pinterest (still haven’t checked out pinterest yet? you should!):

9 oz frozen cheese tortellini
2 cans (10.75 oz each) tomato soup, undiluted
2 c vegetable broth
2 c milk
2 c half & half
1/2 c oil-packed sun dried tomatoes, chopped
1 t onion powder
1 t garlic powder
1 t dried basil
1/2 t salt
1/2 c shredded parmesan cheese
prepare tortellini according to package. meanwhile, mix all other ingredients (except cheese) in a large pot and cook over medium heat. stir in tortellini, followed by cheese. simmer for 15 minutes, then serve, garnished with a sprinkle of cheese. (i served mine with salad and crusty grain bread.)
