chef #16: extreme chocolate cake

i rarely post about desserts, but this one is too good not to share! my friend meridith made it for a baby shower and everyone fell in love with how rich & moist it is. it’s taken from allrecipes.com, but i edited it a tiny bit. disclaimer: the “extreme” in the title of the cake also refers to how extremely horrendous this cake is for your health. enjoy with caution!

EXTREME CHOCOLATE CAKE (serves 12-16)
 2 c white sugar
 1.75 c flour
3/4 unsweetened cocoa powder
1.5 t baking soda
1.5 t baking powder
1 t salt
2 eggs
1 c milk
1/2 c vegetable oil
2 t vanilla extract
1 c boiling water
3/4 c butter, room temperature
1.5 c unsweetened cocoa powder
5 c confectioners’ sugar
2/3 c milk
1 t vanilla extract
preheat oven to 350 degrees. grease two 9-inch cake pans. use the first set of ingredients to make the cake. in a medium bowl, combine dry ingredients. add the eggs, milk, oil, and vanilla extract and mix for 3 minutes with an electric mixer. stir in the boiling water by hand. pour evenly into the pans and bake for 30-35 minutes or until a toothpick inserted comes out clean. allow to cool in pans for 10 minutes, then remove and cool completely.
to make the frosting, use the second set of ingredients. cream butter until light and fluffy. alternate stirring in the dry ingredients with the wet ingredients. continue to beat until the mixture reaches a spreading consistency. frost the cake and refrigerate until serving. *note: i had way, way too much frosting. in the future, i’ll cut the frosting recipe by at least a quarter.
