RECIPE: Marinara Pasta

This was originally called "Spicy Marinara Pasta" but I made it recently and Brandon and I decided that it's not very spicy at all! I decided to drop "spicy" from the name. If you want to increase the spice, add more red pepper flakes!

2 T olive oil
1/2 small onion, chopped
4 cloves garlic, chopped
2 T tomato paste
28 oz plum tomatoes in puree
1 t sugar
salt to taste
1/4 t red pepper flakes
1 lb large pasta (such as rigatoni)
1/2 c fresh basil
6 T part skim ricotta

Heat skillet over medium heat. Add oil, onion, & garlic and cook 2 minutes. Add tomato paste and cook an additional minute. Add tomatoes, sugar, salt, & red pepper flakes. Cook, uncovered over medium heat for 12 minutes, stirring occasionally. 

While sauce simmers, cook pasta as directed. Tear basil into tiny pieces and stir into sauce. Serve pasta & sauce with 1 T ricotta on top of each serving.
